Guys, I am hanging on to the last days of summer. Let's face it, it hasn't been that hard considering it is still so warm outside! I realize my timing on this post is not great BUT I had so many people inquire about a salad I posted on my insta-stories on Labor Day weekend that I figured I might as well go ahead and post it anyways. And to be honest, this salad is good just about anytime of the year!
I originally came up with this summer salad for 2 reasons. 1. I was sick of eating unhealthy every time I went to a barbecue (sorry friends) and 2. I bought a lemon white balsamic that was amazing and I wanted to use in everything! This, paired with my weekly farmers market finds created a match made in heaven. It has become my go-to dish to pass for every picnic, and it was a hit every time!
This salad is so quick to make and super healthy. It was originally made oil-free, sugar free and dairy free. I later added in feta cheese but that part is totally optional- it is good either way!
Quick side note- If you live in Northern VA you need to check out Manassas Olive Oil Company. They are right downtown or at the farmers market on Saturdays and they are amazing!! This recipe uses their Sicilian lemon white balsamic, but you could easy sub in the balsamic of your choice. My biggest suggestion though- don't use a cheap no-name brand! I promise the better quality stuff will make all the difference in the world. Plus, always shop local :-)
HEALTHY SUMMER BEAN SALAD
2 tbsp lemon balsamic
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
dash of cumin to taste (optional, this can be a strong flavor if you don't like it!)
1 small cucumber, peeled and diced
1 tomato diced
1 yellow pepper diced
1/4 cup diced red onion
1 can cannilini beans, drained and rinsed (I always use beans with no added salt)
1 can garbanzo beans, drained and rinsed
1 can black eyed peas, drained and rinsed
1/4 cup feta (optional for all you non-dairy eaters)
1 cup cilantro, roughly chopped
Now here is the hard part... dump it all in a bowl!!!
I guess to be proper I should tell you to mix the dressing of balsamic and seasoning ahead of time. But, I will be completely honest with you, I most definitely do not do that ;-)
This was a fly by the seat of my pants type salad and it remains that way today!
